Tomato soup with Hartlief Kabanossi Salami, mascarpone and fresh basil
Perfect for curling up with on a cold, winter day, this intensely flavoured soup is warming and comforting. The Kabanossi and mascarpone cheese add some decadence to an otherwise quick and easy soup. Banting friendly.
- 40ml Butter
- 2 Onions, chopped
- 2 Small sweet potatoes, peeled and chopped
- 2 Tins Italian style tomatoes in tomato sauce
- 750ml Chicken stock
- 2 Garlic cloves, crushed
- Handful fresh basil, washed and chopped
- Salt and freshly ground black pepper
- 100g Mascarpone cheese
- 80g Hartlief Kabanossi sausage
Heat butter in a medium saucepan, sauté onions lightly and add diced sweet potato. Stir for a few minutes until the butter has been absorbed by the sweet potato.
Add tomatoes, stock, garlic, basil and seasoning.
Blend soup until smooth.
Add the mascarpone cheese just before serving. Keep some of the mascarpone aside to spoon on top of the soup. Do not heat the soup after the mascarpone has been added.
Slice the Kabanossi and add just before serving.
