Mustard and olive oil vinaigrette
This vinaigrette is tangy and flavourful, and perfectly offsets the richness of the meat.

Salt and freshly ground black pepper
Instructions
Place all the ingredients into a bottle and shake.
Refrigerate.
Drizzle over carpaccio just before serving.
