Tomato soup with Hartlief Kabanossi, mascarpone and fresh basil
Perfect for curling up with on a cold, winter day, this intensely flavoured soup is warming and comforting. The Kabanossi and mascarpone cheese add some decadence to an otherwise quick and easy soup. Banting friendly.
  1. Heat butter in a medium saucepan, sauté onions lightly and add diced sweet potato. Stir for a few minutes until the butter has been absorbed by the sweet potato.
  2. Add tomatoes, stock, garlic, basil and seasoning.
  3. Simmer for 15 to 20 minutes on low.
  4. Blend soup until smooth.
  5. Add the mascarpone cheese just before serving. Keep some of the mascarpone aside to spoon on top of the soup. Do not heat the soup after the mascarpone has been added.
  6. Slice the Kabanossi and add just before serving.
  7. Enjoy!
