Recipe directions


  1. In a bowl, scramble the 2 eggs and set them aside. Now cut your mushrooms in quarters, cut a nice thick slice of tomato for grilling and butter your Portuguese roll slices.
  2. In a pan, heat up a bit of oil, then start frying the mushrooms.
  3. Season to taste.
  4. Move them to the side and in the same pan sear the cocktail viennas and tomato.
  5. In a non-stick pan, toast the lightly buttered Portuguese roll slices.
  6. Remove from pan and set on a plate.
  7. Wipe pan clean and melt a knob of butter.
  8. Add your eggs and slowly stir to make delicious fluffy eggs.
  9. On the one slice, place the eggs.
  10. On the other slice, place the Hartlief Farm Smoked Ham.
  11. Add the Hartlief Cocktail Viennas, tomatoes and mushrooms to the plate.
  12. Garnish with chopped chives and parsley.
  • 2 Portuguese rolls sliced
  • 4 large eggs
  • 200g Hartlief Farm Smoked Ham
  • 550g Hartlief Cocktail Viennas
  • Butter (for bread and scrambled eggs)
  • 2 punnet button mushrooms
  • 2 medium tomatoes
  • Salt and pepper for seasoning
